Bailey's Biscoff Cheesecake Truffles

• 1 cup Biscoff cookie crumbs
• 1/3 cup cream cheese, room temperature
• 2 tbsp Bailey’s Irish cream
• 1 tbsp Biscoff spread 
• 1 cup white chocolate chips
• tbsp Biscoff spread



1. Mix the cookie crumbs, cream cheese, Bailey’s and 1 tbsp Biscoff spread together in a bowl until combined
2. Use a small cookie scoop to form equal size amounts and shape with your hands into a round truffle, then place onto a lined tray and freeze for 2 hours
3. In a microwave safe bowl melt the chocolate and 1 tbsp Biscoff spread in 30 second increments until just melted. Stir to combine
4. Insert a toothpick into the centre of each truffle, and then dip into the chocolate mixture. Add sprinkles to the base of the truffle, and place back onto a lined try shaking the truffle off the toothpick slowly before adding more sprinkles on top.
5. Keep in the fridge in an airtight container for up to 5 days and enjoy!
