Coconut Glazed Bunny Donuts

Donut mind if I do! Eat at least three of these adorable and delicious baked bunny-inspired donuts, that is. These cream cheese glazed and coconut decorated donuts are surprisingly easy to make and will bunny hop right off the serving plate at your Easter party this year. 

 

Vanilla Cake Donut:

  • 1 C AP Flour, Sifted
  • ½ C White Sugar
  • 1 tsp. Baking Powder
  • ¼ tsp. Salt
  • 1/3 C Whole Milk
  • 1 Large Egg
  • 1 T Pure Vanilla Extract
  • 2 T Salted Butter, Melted
  • Wilton Donut Baking Pans from Amazon

Preheat oven to 425 °F and grease a donut pan.  In a large bowl, add sifted flour, sugar, baking powder and salt.  Stir to combine.  Add milk, egg, vanilla, and butter and combine until smooth.  Spoon into greased pan and bake 7-8 minutes or until golden brown. Remove from the pan and set on a rack to cool.  


Cream Cheese Glaze and Coconut Topping: 

  • 4 oz. Cream Cheese, softened 
  • 1 Cup Powdered Sugar
  • ¼ C Whole Milk or Heavy Cream
  • 1 C Shredded Coconut
  • Cottontail Sprinkles! 

In a large mixing bowl with a whisk attachment, add softened cream cheese and start to whip.  Slowly add powdered sugar and whip until creamy.  Add milk/heavy cream slowly and whisk until smooth.  Dip donuts in the glaze and top with shredded coconut. Finish off with a drizzle of pink chocolate and our Cottontail Sprinkle Mix!
