Snowy days mean mittens, scarves, and all the hot cocoa one can drink. No better pairing than with one of these Kitchen Sink Hot Cocoa cookies. Loaded with chocolate and butterscotch chips, pretzels, and mini marshmallows, you'll be warm and cozy while enjoying a cup of cocoa and one of these cookies!
Ingredients
1 cup unsalted butter, room temperature
1 cup light brown sugar
1/2 cup granulated sugar
1 egg + 1 egg yolk
1 tsp vanilla extract
2 cups all-purpose flour
1 tbsp cornstarch
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips
1/2 cup butterscotch chips
1/2 cup salted pretzels
1/2 cup mini marshmallows
1/4 cup Hot Cocoa sprinkles
2 tbsp milk chocolate, melted (optional for drizzling on top)
Sea salt (optional for sprinkling on top)
Method
Place the butter and sugars in the bowl of a stand mixer and mix on medium speed for 2-3 mins
Add the egg, egg yolk and vanilla and mix on medium until combined
Add the flour, cornstarch, cocoa powder, salt and baking soda, and mix on low until just combined
Finish by mixing in the add-ins including the sprinkles and feel free to customize to your liking!
Scoop the cookie dough with a ¼ cup scoop onto a lined cookie sheet then place the tray in the freezer for 15 mins
Preheat the oven to 350°F
Bake in the preheated oven for 10 – 12 mins
Leave on the tray for a further 10 mins, and then allow to cool on a wire rack
Drizzle melted chocolate over the cookies, add more sprinkles and finish with a sprinkling of sea salt flakes if desired!
