Chocolate Egg Rocky Road Bars

• 1/2 cup dark chocolate, minimum 70% cocoa
• 1/3 cup milk chocolate
• 1/4 cup unsalted butter
• 2 tbsp golden syrup
• 10 Golden Oreo’s, crushed into pieces
• 3/4 cup mini marshmallows
• 1 cup mini easter eggs, divided 



1. Line a 9 x 5-inch loaf tin with baking paper leaving overhang on the sides to allow for easy removal
2. Place the dark chocolate, milk chocolate, butter, and golden syrup in a heatproof bowl over a double boiler and stir until melted. Leave to cool for 10 mins
3. Add the crushed Oreo’s, marshmallows and 1/2 cup mini easter eggs to the chocolate and stir to combine, then place into the loaf tin and flatten with a spoon
4. Add the remaining 1/2 cup mini easter eggs and sprinkles on top and then leave to set in the fridge for 1-2 hours
5. Use a heated knife to cut the rocky road into 10 squares, then place in an airtight container and keep in the fridge for up to 1 week.
