Do you know what’s better than a bundt cake? Mini bundt cakes! And because they are mini it means you can eat twice as much, right?! Here’s a simple and sweet recipe for mini vanilla bundt cakes that won’t leave your oven on for hours.
Pre-heat that aforementioned oven to 350 and get to creaming the sugar and shortening. Add in the remaining ingredients saving the buttermilk for last. Divide and scoop batter accordingly into well oiled and floured mini bundt cake pans and bake for approximately 25-30 minutes or until browned and smelling like vanilla heaven.
After these little morsels of delight are fully cooled mix the vanilla glaze ingredients together and drizzle on top of each bundt. Don’t spoon. Don’t pour. Don’t dip. Drizzle. Before the glaze sets give each bundt a generous sprinkle with Sprinkle Pop “Snowsuit” sprinkle mix and a light dusting of powdered sugar for that fresh winter snowfall feel.
