Pumpkin Energy Bites

Back to school, all that end of summer yardwork, and the start of thanksgiving prep. Phew...I'm exhausted just thinking about it all. Let's whip up these Pumpkin Energy Bites for a quick and tasty seasonal hit of extra energy that's sure to get you through that afternoon slump. 
Pumpkin Energy Bites
1 1/2 cups whole grain oats
1/2 cup vanilla protein powder
1/4 cup peanut butter
1/4 cup honey
1/2 cup seeds (I used pumpkin and hemp seeds)
Pinch of salt
In the bowl of a food processor add all the ingredients except for the sprinkles and mix until a dough forms. With a spatula, mix in the sprinkles. With a 1.5 tbsp cookie scoop, roll into balls and refrigerate for up to 7 days. Enjoy!
