Pumpkin Spice Rice Krispie Treats

Is any childhood complete without Rice Krispie Treats?! I think not. The ooey gooey marshmallow and crunchy rice krispie cereal makes an easy treat in a snap. But as adults we want something a bit more refined, right. We can’t just go around eating our kids’ snacks.

Let me introduce you to these fall-inspired Pumpkin Spice Rice Krispie Treats. Yes, you read that right…I said pumpkin spice! Grab a large pot and start melting the butter over low heat. Once it’s melted add in the pumpkin spice marshmallows, salt, and vanilla extract. Next comes the marshmallow fluff and pumpkin spice rice krispies. Mix all that pumpkin flavoured goodness until fully combined and then spread it in a prepared sheet pan. Here comes the hard part: let is rest and set for at least 2 hours or even overnight if you have that much self-control (kudos if you do.)

Alright, it’s 2 hours later (you did it!) Let’s get down to the fun part and decorate these incredibly pallet-pleasing pumpkin rice krispie treats. Find some fun fall-inspired cutters and cut the rice krispie treats into the desired shape. Melt the vanilla candy coating and give each treat a generous dip. Before the candy coating sets, sprinkle each shape with some “Fall Leaves Confetti Sprinkles” to give these autumn treats a pop of that extra fall colour. And there you go…Pumpkin Spice Rice Krispie treats. Sure to please everyone’s inner child.

Pumpkin Spice Rice Krispie Treats

Yield: 1 Full Sheet Tray of Treats

 

Ingredients:

12 Tbsp. Salted Butter

¼ tsp. Kosher Salt

½ tsp. Pure Vanilla Extract

2-8 oz. Bags of Pumpkin Spice Marshmallows

1 C. Fluff Marshmallow Topping

8.5 Cups Pumpkin Spice Rice Krispies

½ Package of Microwaveable Vanilla Candy Coating

 

Method:

In a large pan, melt butter on low heat.  Once melted, add marshmallows, salt, and vanilla extract.  Stir on low heat until all ingredients are melted and well incorporated.  Add marshmallow fluff topping and combine.  Add rice krispies and stir until coated in marshmallow mixture. 

Spread the mix onto a parchment lined and pan release sprayed sheet tray.  Allow to set, wrapped, 2 hour or preferably overnight. 

Cut into desired shape and dip into melted candy coating and decorate as you wish!
