Pistachio Paradise Cake

This lovely pistachio cake is absolutely perfect for spring and gives you that feeling of eating a delicious scoop of pistachio ice cream, who doesn't love that?! You can keep this cake simple or add intricate piping details, the choice is yours, just make sure to add our Signature sprinkle mix for an extra touch of spring vibes!

Ingredients:

For the Cake:

  • 1 box Duncan Hines French Vanilla Cake Mix
  • 3 large eggs
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 box instant pistachio pudding mix
  • 1 cup chopped pistachios
  • 1 bottle of our Signature sprinkle mix

For the Pistachio Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Instructions:

  • Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • Prepare the Cake Batter: In a large mixing bowl, combine the Duncan Hines French Vanilla Cake Mix, eggs, milk, vegetable oil, instant pistachio pudding mix, and chopped pistachios. Mix on medium speed for about 2 minutes until well combined.
  • Baking: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  • Prepare the Pistachio Cream Cheese Frosting: In a mixing bowl, beat together the softened cream cheese and butter until smooth and creamy. Add powdered sugar gradually, mixing well after each addition. Stir in the vanilla extract and almond extract.
  • Assemble the Cake: Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a layer of the pistachio cream cheese frosting over the cake layer. Place the second cake layer on top and frost the entire cake with the remaining frosting.
  • Decorate: With your leftover frosting, add a small amount to a bowl and add pink food coloring and then leave some white. Using your piping bag with a star tip, make small designs all over the outer edges of the cake. Switch and add your pink frosting to fill spots in. Once this is done, sprinkle our Signature sprinkle mix over the top!
