Springtime Cake Popsicles

Ingredients:

(Yield: 12)

For the Cake:

  • 1 box of white cake mix (plus required ingredients on the box, such as eggs, oil, and water)
  • Pink and orange gel food coloring
  • 1 bottle of Springtime In Paris sprinkles

For the Frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

For the Popsicle Coating and Decoration:

  • 12 oz (about 340g) white chocolate or candy melts (you can divide it into two and use pink and orange candy melts for respective colors)
  • Sprinkles or edible glitter for decoration
  • 12 popsicle sticks

Instructions:

Bake the Cake:

  • Prepare the Cake: Follow the instructions on the cake mix box to prepare the batter. Once mixed, divide the batter into two separate bowls.
  • Color the Batter: Add pink food coloring to one bowl and orange to the other. Mix each until you achieve the desired color.
  • Bake: Pour the batter into a greased 9x13-inch baking pan, creating two sections (one for each color) or using separate pans if available. Bake according to the box instructions. Allow the cake to cool completely.

Make the Frosting:

  • Mix Ingredients: Beat the butter until creamy, then gradually add powdered sugar, milk, and vanilla extract. Continue mixing until smooth.

Create Cake Pop Mixture:

  • Crumble the Cake: Once cooled, crumble the pink and orange cakes into separate bowls using your hands or a fork.
  • Mix with Frosting: Add half of the frosting to each bowl of cake crumbles. Mix until the cake is moist and can hold a ball shape. If the mixture is too dry, add a little more frosting.

Form the Popsicles:

  • Shape the Popsicles: Take a small amount of the pink cake mixture and shape it into a thick disc. Do the same with the orange cake mixture. Gently press the pink and orange discs together, and mold them into a popsicle shape. Insert a popsicle stick into the base of each. Place them on a baking sheet lined with parchment paper and freeze for about 1 hour, or until firm. You can also use a mold for this.

Coat the Popsicles:

  • Melt the Chocolate/Candy Melts: Melt the white chocolate or candy melts in the microwave in 30-second intervals, stirring in between, until smooth. If using white chocolate, you can divide it into two and tint half with pink food coloring and the other half with orange.
  • Dip the Popsicles: Dip each frozen cake popsicle into the melted chocolate or candy melts, covering it completely. Tap off any excess coating. Decorate with your Springtime in Paris sprinkles while the popsicles are still wet.

Final Touches:

  • Chill to Set: Place the coated popsicles back on the parchment paper and refrigerate until the coating is set, about 15 minutes.
