Thick and Chewy Chocolate Mint Cake Mix Cookies

This delicious recipe is perfect for St. Patrick's Day but can also be used long after it ends! The chocolate mint flavor is to die for and you wont believe how thick and chewy these cookies are!

For the Cookies:

Ingredients:

(Yield: 12)

1 box (about 15.25 oz) chocolate cake mix

1/2 cup vegetable oil

2 large eggs

1 cup crushed mint Oreo cookies (about 10-12 cookies)

Additional crushed mint Oreo cookies for topping (optional)

1 Bottle of Sprinkle Pop St. Patrick's Day Sprinkle Mix!

Instructions:

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, combine the chocolate cake mix, vegetable oil, and eggs. Stir until well combined and a sticky dough forms.

3. Fold in the 1 cup of crushed mint Oreo cookies until evenly distributed throughout the dough.

4. Use a cookie scoop or your hands to form the dough into 12 equal-sized balls. Place them on the prepared baking sheet, leaving enough space between each cookie as they will spread.

5. Bake in the preheated oven for 10-12 minutes or until the cookies are set around the edges but still soft in the center.

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

For the Mint Green Frosting:

Ingredients:

1/2 cup (1 stick) unsalted butter, softened

2 cups powdered sugar, sifted

1-2 tablespoons milk or cream

1/2 teaspoon mint extract

Green food coloring (gel or liquid)

Instructions:

1. In a medium bowl, beat the softened butter on medium speed until creamy, about 1-2 minutes.

2. Gradually add the powdered sugar, 1/2 cup at a time, beating on low after each addition. Add 1 tablespoon of milk or cream and the mint extract. Beat on high until the frosting is smooth and creamy. If the frosting is too thick, add a little more milk or cream until you reach the desired consistency.

3. Add green food coloring, one drop at a time, until you achieve your desired shade of mint green. Mix thoroughly to ensure the color is evenly distributed.

4. Transfer the frosting to a piping bag fitted with a circular tip. Pipe the frosting onto the cooled cookies in a circular motion, starting from the outside and working your way in.

5. Optionally, you can sprinkle additional crushed mint Oreo cookies on top of the frosted cookies for an extra crunch and flavor.

6. Last but not least, spread your St. Patrick's sprinkles all over the top!
