Chocolate Raspberry Truffle Cupcakes
These Chocolate Raspberry Truffle Cakes are perfect for Valentine's Day! The cream cheese frosting mixed with the bold raspberry flavor is a perfect combination or sweet and tangy. This recipe makes about 24 cupcakes and is paired perfectly with our Romance sprinkle mix!
Ingredients:
For the Cupcakes:
1 box Duncan Hines Dark Chocolate Fudge Cake Mix
3 large eggs
1 cup buttermilk
1/3 cup vegetable oil
1 cup fresh raspberries
For the Raspberry Truffle Ganache (Filling):
1 cup fresh raspberries
1 cup dark chocolate chips
1/2 cup heavy cream
For the Chocolate Raspberry Cream Cheese Frosting:
8 oz cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
1/4 cup cocoa powder
1 teaspoon vanilla extract
1/2 cup fresh raspberries for decoration
Instructions:
1. Preheat the Oven: Set your oven to 350°F (175°C). Line 2 12-cup muffin tins with cupcake liners.
2. Mix the Cupcake Batter: In a large bowl, blend the cake mix, eggs, buttermilk, and vegetable oil together on medium speed for 2 minutes until smooth. Carefully fold in the fresh raspberries.
3. Bake the Cupcakes: Distribute the batter evenly among the cupcake liners, filling each about 2/3 full. Bake for about 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
4. Prepare the Chocolate Raspberry Cream Cheese Frosting: Beat the cream cheese and butter in a bowl until creamy. Gradually add the powdered sugar, mixing well after each addition. Incorporate the cocoa powder and vanilla extract until the mixture is smooth and spreadable.
5. Assemble the Cupcakes: Once the cupcakes are cool, use a small knife or cupcake corer to remove a core from the center of each cupcake. Fill each with a spoonful of the raspberry truffle ganache.
6. Frost the Cupcakes: Pipe or spread the chocolate raspberry cream cheese frosting over the top of each cupcake.
7. Decorate: Top with our Romance Sprinkle Mix and a chocolate Oreo!
