St. Patty's Personal Cake Pans

These personal St. Patty's cakes are perfect for gifting or to have at your next festive get-together because everyone gets the same amount, they taste delicious, and they're absolutely adorable! This recipe makes 12 mini cake pans, follow the tutorial below for more details! 

Green Cake Ingredients:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup butter, softened
  • 1 cup milk
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 large eggs
  • Green food coloring (gel for more vibrant color)
  • Your Sprinkle Pop St. Patty's sprinkles of choice!

White Buttercream Frosting Ingredients:

  • 1 cup unsalted butter, softened
  • 4-5 cups powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 2-4 tablespoons heavy cream or milk
  • Pinch of salt

Equipment:

  • 12 mini rectangle cake pans
  • Mixing bowls
  • Electric mixer
  • Measuring cups and spoons

Instructions:

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour the mini cake pans or line them with parchment paper for easy removal.
  2. Mix dry ingredients: In a large bowl, sift together the flour, sugar, baking powder, and salt.
  3. Add butter and milk: To the dry ingredients, add the softened butter and milk. Mix on medium speed until just combined.
  4. Incorporate eggs and vanilla: Add the eggs one at a time, followed by the vanilla extract, beating well after each addition until the batter is smooth.
  5. Color the batter: Add green food coloring to the batter, a little at a time, mixing thoroughly until you achieve the desired bright green color.
  6. Fill the pans: Divide the batter evenly among the prepared mini rectangle cake pans, filling each about 2/3 full to allow for rising.
  7. Bake: Bake for 15-20 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  8. Cool: Allow the cakes to cool completely, while you do this you can start on icing!

For the Buttercream Frosting:

  1. Beat the butter: Using an electric mixer, beat the butter on medium speed until creamy, about 2 minutes.
  2. Gradually add powdered sugar: Slowly add the powdered sugar, one cup at a time, beating on low speed until combined. Increase speed to high and beat until light and fluffy.
  3. Add vanilla and cream: Mix in the vanilla extract. Add heavy cream or milk, one tablespoon at a time, until the frosting reaches your desired consistency.
  4. Adjust consistency if needed: If the frosting is too thick, add more cream, one tablespoon at a time. If it's too thin, add more powdered sugar, a quarter cup at a time.

Assembly:

  1. Frost the cakes: Use an offset spatula or a piping bag to apply the white buttercream frosting over each mini cake. Ensure each cake is generously covered with frosting.
  2. Decorate: Add your Sprinkle Pop St. Patty's sprinkles and royal icing pieces!
