Confetti Cake Mix Cookies

These confetti cake mix cookies are the key to an easy but delicious treat at your little one's birthday party! You can even simplify things by using a canned frosting to pipe onto these treats. Here, we are using our Paw Patrol inspired sprinkles to make these cookies, but you can use our Bluey inspired one's for these cookies as well!

Ingredients: 

For the cookies:

  • 1 box confetti cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup white chocolate chips
  • 1 bottle of Sprinkle Pop Hero Dog sprinkles

For the Blue Icing:

  • 1 can of your favorite icing (we recommend a vanilla buttercream or cream cheese)
  • Blue food coloring
  • 1 star tipped piping bag

Instructions:

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or lightly grease them to prevent sticking
  • In a large mixing bowl, combine the confetti cake mix, eggs, and vegetable oil. Add the vanilla extract if using. Mix well until all the ingredients are thoroughly combined and you have a uniform dough.
  • If you're including white chocolate chips, fold them into the dough now.
  • Use a tablespoon or a cookie scoop to measure out the dough. Roll the dough into balls or drop them by the spoonful onto the prepared baking sheets. Ensure they are spaced about 2 inches apart to allow room for spreading.
  • Bake in the preheated oven for 10-12 minutes, or until the edges start to turn golden brown. The centers might look slightly undercooked; they will firm up as they cool.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. This step helps the cookies set properly.
  • Once they are cooled, mix a small amount of blue food coloring into your icing and once it's fully incorporated, add into your piping bag.
  • In swirling motions, ice each cookie evenly.
  • Once the cookies are iced, take our Hero Dogs sprinkle mix and sprinkle it over each cookie.
