Mini Carrot Cake Pans

These mini cake pans with chocolate covered strawberrys are perfect for Easter and so creative! The best part is that they're super simple to make, using a box cake mix and store bought frosting so you'll waste no time. Enjoy!

Ingredients and supplies:

  • Sprinkle Pop mini rectangle cake pans (set of 12)
  • Duncan Hines chocolate cake mix (and the ingredients listed on their box)
  • 1 small bottle of buttermilk
  • 2 boxes of strawberries
  • 2 bags of white candy melts
  • Orange food coloring
  • 1 can of chocolate fudge frosting
  • 1 container of oreos
  • Cooking spray or oil
  • 2 large Ziploc bags

For the cake:

  • In a large mixing bowl, follow the directions on the cake mix except the water, substitute that with the same amount of buttermilk
  • Spray or grease your mini cake pans and evenly pour your cake mix into each pan evenly.
  • Bake according to the box instructions.

For the strawberries:

  • Clean your strawberries, dry them, and set aside.
  • In a bowl, heat your candy melts in small intervals in the microwave until melted.
  • Add orange food coloring until you get the desired color.
  • Prepare a baking sheet with parchment paper.
  • Dip one at a time and place on a sheet.
  • When you’re done, place them in the fridge to cool for about 15 minutes.
  • In a ziploc bag, add the rest of your orange melted candy and cut a small hole in the corner.
  • Pipe in drizzling motions on each strawberry.

For the oreo topping:

  • Take the filling out of your oreos and place them into your large ziploc bag.
  • Seal the bag and crush the oreos, you can do this with a rolling pin easily.
  • Once done, set aside.

  • Once the cakes are out of the oven and cooled, use a small spoon or a butter knife to cut 3 small holes in the cake.
  • Once this is done, frost your cakes with the chocolate fudge frosting.
  • Add your oreo crumbles.
  • Lastly, press your strawberries into the holes that you made.
